Access 365 version 2408 build 17928.20114 was released to the Current Channel on Mon 26 August.
Since then, there have been numerous reports of serious issues on various forums.
For example, see this lengthy thread at Microsoft Tech Community

The issue also affects users on both insider channels, Current Channel (Preview) and Beta, versions 2409 and 2410.

Symptoms:

These are almost identical to those which last surfaced only 3 months earlier with the version 2405 update. These include:
•   Closing Access apps leaves a hanging instance as a background process which must be forcibly closed in task manager before the databases can be reopened
•   Error 3048 - cannot open any more databases and/or error 3037 - cannot open any more tables. These occur when Access runs out of available connections
•   In some cases, Access cannot be closed normally or, conversely, may crash without warning.

Workarounds:

Suggested workarounds include:
•   Running all apps from a trusted location - this also bypasses the anti-malware scan interface (AMSI) allowing code to run faster.
•   Keeping a 'dummy' Access database running in the background at all times
•   Using code to forcibly close the background hanging tasks - see my article: Forcibly Shutdown Access
•   Roll back to an earlier version of Access not affected by the issue e.g. Current Channel version 2407

Fix Dates / Channels:

Already fixed for those in the Current Channel (Preview) version 2409 build 18025.20024 on Tues 3 Sept
The same fix will also be applied to the Current Channel (version 2408) and the Beta Channel (version 2410) on Tues 10 Sept.
